Description of the raw material
Seasoned Asiago cheese, also called Asiago d’allevo, is produced with partially skimmed milk and left to mature for a period ranging from 3 to over 15 months. The colour is straw yellow, and is characterized by small or medium-sized holes, it has a strong and savory taste, which increases with aging. It is also called Asiago Mezzano (aged from 4 to 6 months), Asiago Vecchio (aged from 10 to 15 months) and Asiago Stravecchio (aged over 15 months). The production area of Asiago PDO includes the entire territory of the provinces of Vicenza and Trento and a part of the provinces of Treviso and Padua, corresponding to their Pedemontana belt.
