Description of the raw material
Grana Padano is a hard PDO cheese, which is cooked and seasoned and made with cow’s milk, salt, rennet and lysozyme (lysozyme is an antibacterial enzyme found naturally in many organic substances, including egg white and breast milk). Grana Padano cheese is produced and processed only in 32 provinces and 5 different regions in Italy, namely Piedmont, Lombardy, Veneto, Emilia-Romagna and Trentino Alto Adige. These are the regions in which the traditions and the heritage of Grana Padano have been established. The seasoning varies from a minimum of 9 months to 24 months. It is naturally lactose free due to the characteristics of its production and seasoning process.
