Description of the raw material
Parmigiano Reggiano is a hard PDO cheese, known in Italy as the “Cheese king”. It is a hard granular cheese made with unpasteurized cow’s milk. It consists of only 3 ingredients: milk, rennet and salt. Contains no preservatives or additives. It is produced only in a specific area of Emilia-Romagna and the province of Mantua, the seasoning varies from a minimum of 12 months to 36 months and beyond.
