Description of the raw material
Pecorino Romano is a hard cheese PDO, cooked, produced with whole fresh sheep’s milk, derived exclusively from farms in the production area (Regions of Sardinia, Lazio and Tuscany). The flavour of the cheese is aromatic, slightly spicy and savoury as a table cheese (maturing period of 5 months), intensely spicy as a grated cheese (maturing period of 8 months). A few cheeses in the world have such ancient origins as Pecorino Romano. For more than 2000 years the flocks of sheep that graze freely in the countryside of Lazio and Sardinia have been producing the milk from which the cheese is made. Even the ancient Romans appreciated Pecorino Romano, and the Roman legionaries knew it well: they always added an ounce of pure sheep’s cheese to the daily ration of spelled to give them strength and energy before battle.
