Provolone
Provolone is a spun pasta cheese produced with cow’s milk, and comes in two types, sweet and spicy. It is available in various formats to meet the needs of the food service, food industries and operators of large-scale distribution.
In addition to slices of different sizes, the range also includes shreds and the classic half-moon cut, available vacuum-packed or in bags up to 2.5kg.

Description of the raw material
Although its origins lie in the regions of southern Italy, Provolone has also settled very well in the Po Valley area, in particular in Lombardy, Veneto, Emilia-Romagna and part of the province of Trento. Provolone is a spun pasta cheese produced with cow’s milk, and comes in two types, sweet and spicy. The Sweet variant is distinguished by the use of calf rennet and by a seasoning not exceeding 2-3 months; the Spicy variant is distinguished by the use of kid and/or lamb rennet paste and by a seasoning ranging from a minimum of 3 months to over a year. The shapes in which provolone is made are various: cylindrical, pear-like, loaf-like and flask-like are the most common.
