Description of the raw material
Taleggio PDO is characterized by a soft texture and generally a square shape, with a very thin rind with a soft texture and a pink colour, with the presence of mould. The paste is uniform and compact, softer under the rind and at the end of seasoning, more crumbly in the centre of the wheel. The colour of the paste varies from white to straw yellow, with a few very small holes. Being it a protected designation of origin (PDO) cheese, it can be produced and seasoned only in the area of origin which includes: in Lombardy, the provinces of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Pavia; in Piedmont, the province of Novara; in Veneto, the province of Treviso. The milk used for production must also come from cows reared in these territories.
