Description of the raw material
Mascarpone is a soft cheese, obtained from the processing of cow cream and citric acid, typical of some areas of Lombardy, in particular the province of Lodi and Abbiategrasso. The term mascarpone probably derives from the word “mascharpa”, which in the local dialect means cream of milk. It contains no added salt or preservatives and is used as an ingredient for desserts such as tiramisu or for filled pasta. Mascarpone has a sweet and creamy taste and has a soft and spreadable texture.
